Tuna Pie
Ready made pastry
2 cans of tuna drained
1 1/2 cups frozen broccoli thawed and drained
1 cup cooked diced potatoes
1/2 cup diced semi cook carrots
1/2 cup diced onion
1 cup shredded cheese (I used mild cheddar and Gruyere)
1/2 cup grated Parmesan cheese
1 cup bread crumbs
1-2 cups single cream or evaporated milk or half and half
2 tablespoon flour
2 tablespoon butter
1 tablespoon dried dill
1/2 teaspoon dried mustard
pinch of chili powder
salt, pepper to taste
Thaw pie crust and roll it into a deep pie pan or shallow casserole dish. Preheat oven 200 C or 375 F.
Make a medium thickness white sauce using flour, butter, salt, pepper, mustard, chili powder, dill and cream. As the sauce reaches a medium thickness gradually add tuna, onions, potatoes, carrots, broccoli and cheddar and Gruyere cheese stirring after each ingredient. Check that the mixture is not too thick. Add more cream if necessary. Pour mixture into pie dish.
Toss breadcrumbs and Parmesan cheese in 1 tablespoon of melted butter and toast over the stove for 3 mins. Add breadcrumbs to cover top of pie. Bake for 45 mins. Cool 10 mins before cutting.
I served the pie with a cucumber salad over mixed greens.
Amount of veggies used are to your taste.
Cucumbers
Diced tomatoes
Diced carrot
Sliced olives
Tablespoon chopped flat leaf parsley
dash of pepper
Drizzle olive oil
Splash of balsamic vinegar

that pie looks so delicious. I am trying it tonight! not a fan of carrots so i will substitute with peas...yum
