spicy,tomato pepper sauce with penne

Spicy Tomato Pepper Sauce with Penne
Ingredients:

2 15oz cans chopped tomato
1/2 small onion bit size dice

1/2 red bell pepper bite size dice

1/2 yellow bell pepper bite size

4 cloves garlic rough chopped
1 1/2 cu
p sliced mushrooms
2 medium size zucchini (courgettes) grated
2 tablespoons olive oil
1 tablespoon red pepper flaked (chili flakes)

1/2 or more chili powder
2 tablespoon sugar or sugar substitute

salt, pepper

large handful of flat leaf parsley chopped

8 leaves of fresh basil ripped into fourths

1/2 package of penne pasta


In a 2
quart sauce pan fill with water and turn on high heat

Large, deep fry pan on medium high heat add oil, garlic, onions, peppers and mushrooms saute for 5 mins. Grate the zucchini into the pan. Add chili powder, red pepper flakes, salt, pepper, Stir add tomatoes sugar to taste.

Sauce should not be sweet sugar is just added to cut the acidity of the tomatoes. can rage from a pinch up to 2 tablespoons.

Turn the heat down low and allow sauce to simmer while pasta is cooking.


Add 1/2 package of penne to heavily salted water cook till aldente (still firm). 2 mins before draining the pasta add the fresh herbs to sauce.


pasta can be served with fresh garden salad, bread, veal, chicken or alone Sauce could also be used for a veggie lasagna. sauce gets better with in 3 days. leftover sauce can be used for fresh ravioli or tortellini.
